I strive each day to make healthy choices for my family to consume. It can get a bit confusing along the way with all of the labels promising to be healthier than the next. Do I buy organic, all-natural, vegetarian, free-range, grass fed, or just bite the bullet and buy what’s on sale? You really have to go above and beyond these days to fully understand what you are fueling your body with.
Kimberly writes gets right to the point and even has great charts along the way to take with you to the supermarket/farmers market to help you stay on track and not get overwhelmed. I think that’s part of my problem. I stand in the isle reading labels and trying to remember the latest, healthiest article I just read. I don’t want to keep up with all the latest fads, I just want to know what’s healthy and I’ll eat that way.

I know, I know….I haven’t been blogging lately and I missed a Tuesday Tea! More importantly, I haven’t posted super cute pics of Brewer’s first birthday yet. Please be patient, they are on their way;)
Plus I think my mind is going to explode if I don’t start writing soon.
So what have I been doing?
Hmmm…were to start. Brewer’s first birthday was quite the world wind of events with family flying in town, preparing for the party, and taking full advantage of my dad fixing things around the house. After family flew out on Monday, Brewer had his one year visit at the doctor, I started working on new designs for Lint Collection (not posted yet), picked up freelance from Sterling Rice Group in Boulder, and started reading “Eating Between the Lines: The Supermarket Shopper’s Guide to the Truth Behind Food Labels.” Throw in a couple of play dates at the park, working out, and gymboree classes…whew!
I can’t wait to update everyone on all the happenings! Stay tuned…

I decided to write about rainbow carrots because I didn’t even know of their existence till I started receiving produce from Mile High Organics. On a side note, one thing I love about ordering only seasonal produce is the variety. As my niece would put it, “you get what you get and you don’t fuss a bit.”
Here are some fun facts about rainbow carrots:
- Well-known source of vitamin A
- Red carrots= Guard against heart disease and some cancers
- Yellow carrots= Support good eye health
- Purple carrots= Powerful antioxidants.
I enjoy mine best by simply roasting them with oil and a pinch of rosemary. However, I most recently included them in mini muffins that I made for Brewer. He loved them!

Actually, the entire month of March is dedicated to Women’s history to commemorate our significance. I don’t know about you…but I feel fortunate to be a woman of the 21st century. The theme for 2011 is “Our History is Our Strength.” What does that mean exactly?…I think it means something different to each woman.
Here’s what it means to me…
It means that I appreciate all the unrecognized, often distorted hard work of women in the past. Not just the ones that made it into text books but also the unseen, unspoken heros. We may never know who they are or what they contributed, but I’m sure of one thing…there are many. I am using this day to focus on their energy and am grateful for the path they paved for women today. The history of each woman is what makes up my strength.
Judging by the list below we can channel the energy/strength of successful women in the past through our everyday daily routines…and also if we are stranded in the middle of the ocean;)

- Kevlar (used to manufactor extremely durable products such as skis and brake pads to name a few. However, my favorite is the bulletproof vest:)
- Nystatin (first successful fungus-fighting drug)
- Windshield Wiper
- Dishwasher (Shocker!)

- Colored Flare System (produced 1,200,000 flares for the Navy during the Civil War)

Jordan has been working long hours lately and decided to take last Thursday and Friday off. Leaving us with a four day weekend to fill with fun activies, which is exactly what we did.
Thursday: We drove into Denver and hung out with the fishes at the Aquarium.
Friday: We toured a possible school option for Brewer, Primrose. If anyone has experiend with their children attending this school, advice would be great:)
Saturday: I took some time for myself and went to the salon, while Brewer and his Daddy played at the park.
Sunday: Brewer took a nap hiatus, we had family photos taken, and then he pooped all over his jammies before bed….awesome:\
What a great productive weekend! Looking forward to next weekend……BREWER’S FIRST BIRTHDAY PARTY!

What you see in the pic to the left: Jalapeno corn muffins with butter and strawberry jam. Accompanied by a scrambled egg and cup of green tea. Mmmmm!
Jalapeno Corn Bread Muffins:
1 cup flour
1 cup cornmeal
1 1/2 teaspoon baking powder
1/2 teaspoon salt
1 cup non-fat milk
2 Tablespoons butter
2 egg whites
3 Tablespoons jalapeno chopped
2 Tablespoons jalapeno juice
I mix all dry ingredients first, then make a pool in the middle for my wet ingredients. When mixture is blended into a batter I pour them into a greased muffin pan. Bake in 400 degree oven for 20-30 min. Until golden brown and inserted toothpick comes out clean.
These are great for dinner and breakfast!

Welcome to Tuesday tea:) What is Tuesday tea?…ohhh just something I made up in my head. I will be posting every Tuesday about tea or maybe even a subject to talk about over tea.

The above print is from an artist on Etsy. I thought it was cute and reminded me of a conversation I would have with my Mom.
Jordan and I are avid tea drinkers. We have a cup of green in the morning and cup of something relaxing and decaf before bed (Like chamomile or sleepytime.) I’ve been known to boil water with lemon and honey when I’m in a pinch and without (which is silly because Celestial Seasonings is a short bike ride away.) I love the way it makes me feel all warm and fuzzy inside, plus I’ve had many interesting conversations with friends over a cup of tea.
Go ahead…invite a friend over for a cup of tea and see were the conversation goes.
Top 10 reasons for drinking tea:
- Antioxidants of course is #1
- Lowers stress levels
- May aid in fighting off certain cancers
- Helps fight plaque
- Keeps me hydrated
- Has no calories (unless you add sweetener or milk)
- Less caffeine than coffee
- Helps increase metabolism
- Enhance immune system (although this hasn’t seem to be true for me, but I’ll keep trying)
- Great excuse to chat with a friend
There ya have it! If you are not currently a tea drinker, I recommend adding it to your daily routine for at least a couple days and see how you feel. Especially before bed:)
